I was wondering if it's possible to add instruments even after you started a composition. And if so, how? I can't find that section in the 'Help' menu.

Which Finale do you have? If you have Finale 2006 you can click on "tools". There is a button "staff". Click on it and a new topic will be opened "staff" (it's there where you have orders like "edit", "file" etc.). Then click on it and choose "new staves". I hope it will work. I have Finale 2006 so I don't know if it's different than 2007 or 2005.
