Try the ichigos - anime - escaflowne - Memory of Fanelia if u haven't.
It sounds good and is easy.

Easy violin music has a D major key signature and can be played entirely in the first position - can you play using all three/four fingers yet? If so and you've learnt how to do C# on the G string I would recommend BT, which you can find at

Awww - in that case BT is definitely a good one to start with as it's a simple but very lovely piece to listen to (seriously, everyone gets hooked on it!)
Kiss (again from .hack//SIGN but you can find it here on Ichigos) is another nice piece but requires use of 2nd position to play nicely (though you can play it in first position but it's a bit tricky.)
If you fancy a challenge the melody for Cruel Angel's Thesis (Neon Genesis Evangelion, on Ichigos) is quite a toughie.
If I think of any others I'll post :)

Ahhhh, here's the BT MIDI :) You can play the Cruel Angel's Thesis melody by reading the top line of music on the treble clef (as in, if you have a chord there, you play the topmost note in the chord.)
