So I started a piano class this semester at college and as ive just started to learn reading music my teacher told me I should try and pick something not too hard but something I would enjoy playing. So my question to you all is: Is there any Touhou music that isn't super hard for a beginner to play and read.

Yeah, from what I've heard, most Touhou stuff is pretty hard. You'd most likely be looking at years of practice to get there, not months, unless you're a special case. Like a genius, or someone with ridiculous willpower (or more likely, to play Touhou music, both), hahah. Just keep practicing, though.
