What exactly is a flute choir? How many flutes play in this?

Quite a few- as many parts as wanted (but varying ability, especially if there are too many parts), and a keyboard accompaniment may be possible too. You can have bass flute, alto flute and piccolo as well :)

I know there are some full instrumented version of Ocarina of Time Medley somewhere on the internet, try vgmusic.
