I've been playing pieces like Merry Christmas Mr. Lawrence and Xion's Theme, and a lot of fast songs that involve a lot of patterns like La Valse D'Amelie.
Normally, I don't have any problems finding music to play, but most of the pieces I really want to learn are too hard for me right now, as in, I haven't developed adequate dexterity with my fingers in order to learn the piece efficiently. What are some beautiful, unique pieces that you guys would recommend that are around my level?
Preferrably from video games or anime.

I would recommend you Sadness and Sorrow from the anime Naruto. It requires some dexterity at some part of the song.
You can see me play this music : http://www.youtube.com/watch?v=D1PXQvMdcms
It took around 3 hours to record this video XD

You mentioned Amelie which made me think of this song: Sebastian - Brideshead Revisited (http://www.youtube.com/watch?v=ane-7DpgJJg)

It's actually very simple, but you can really play with the expression of it if you're wanting to improve. If you're interested I can give you the sheets. :)

You could always learn "Sadame" from X. It's a lovely piece and really fun to play with emotion.
