I'm doing a general guide on how to transpose music for other instruments, and I've been trying to figure out how to use Finale Notepad (most up to date version) to transpose staves... except I don't think you actually can - I don't use Notepad on a regular basis ('cause I hate it XD) so I don't know if it's down to my own ignorance, but the only thing I could find in the help section on transposition was about changing the key signature which didn't really do anything. Is there some sort of secret method or is it not possible to carry out that function using Notepad?

Neither of those two can be done in notepad. Though I think it's possible in Notepad Plus.
