I need to know the official name of what some people call "chord rolls," or "arpeggio symbols." Also, how do you insert them in Finale?

Their called chord rolls. You put them with the articulation tool(next to the "mf" expression tool) and click double click where you want to put them.

^That's for Finale. If your using Sibelius, It's under the Line tool, about 1/4 of the way down on the left. There's 3 notations for it; one that's a normal roll, one that rolls up, and one that rolls down (the last two with an arrow pointing in the respective locations).
