I've looked through the internet and the usual anime sheet music sites (ichigos,joshs,soda-o-rat) and I haven't found many evangelion songs transcribed for just the violin. Does anybody know where I can get "Cruel Angel's Thesis" for just the violin? or any songs from Eva for just the violin?

Yes you can. Even if it wasn't in the same key you could still play it. It would just sound in a different key.
